a perfect breakfast

I don't think it's possible to eat too many poached eggs on toast. Provided the toast is generously spread with butter, the egg has been properly salted and peppered, and in a perfect world you've also added garden tomatoes and a bunch of basil.



And to be fair, it does make a huge difference that you're eating poached eggs that actually come from the chickens in your backyard. So they occasionally wake us up at 5:30 in the morning... and get randomly broody and we have to separate them from the nesting box so they don't sit on unfertilized eggs for eternity. Among many other things that I don't need to go into right now.

The eggs kind of make it worth it.

So nothing fancy. I probably should have shown this with some beautiful rustic bread instead of plain old sliced wheat bread. I do love poached eggs with rustic bread.

Sometimes the simplest foods are the best, you know?

You must have written this post straight from my brain. I would have a poached egg on toast for breakfast everyday from here to eternity if possible.

We have backyard chickens too, they are funny little beings. Eggs from freerange chickens are so delicious.

Simple foods I find are the best!! Adding fresh fruit to a pitcher of water, adding lemon to give anything flavor or a panini with goats cheese and apricot jam.. always good and oh so simple !! I am going to try a poached egg over toast... sounds delightful!!

Oh, poached eggs on toast are my absolute favorite. Sometimes I love when we run out of groceries and haven't gone to the market so I have an excuse to eat it for dinner.

Poached eggs are a favorite of mine! I know what you mean about fresh backyard chicken eggs. We don't have chickens (sadly) but we have gotten eggs from friends and the difference HUGE!

My favorite: english muffin with butte and sliced avocado with a poached egg on top.

Mmmmm...I'm going to copy you and have this for breakfast tomorrow. Poached eggs are my fave, but you don't want to be around me if I order them at a restaurant and they come out overcooked. I am normally shy to the point of ridiculousness about complaining about food, but overcooked poached eggs will bring out the monster.

i think putting a poached egg on top of anything makes it perfect. cholesterol, shmolesterol...

I have backyard chicken envy right now...haven't had a straight-from-the-chicken fresh egg since I was a kid. Delish.

We had fresh eggs on Sunday morning and they were fantastic. Eggs, hashbrowns, bacon and some sourdough toast. I want it again, right now! Our daughter collected them at a friend's house on Saturday. She was so happy with herself! They have 12 chickens and one had to also be put in chicken time out for sitting around a little too long. :) Yum!
